I can­not find a good recipe!  If any­one has a great (veg­e­tar­ian) lentil soup recipe, please let me know.  Tonight, I made Deb­o­rah Madison’s Hearty Lentil Soup, and it was alright, but it wasn’t great.  I have made a cou­ple other recipes in the past, and I find it is miss­ing a depth in taste.  Any leads, sug­ges­tions, or ideas are appreciated.

    I made this one http://www.foodnetwork.com/recipes/alton-brown/lentil-soup-recipe/index.html the other night…omitted the toma­toes and added one yel­low, one red and one orange bell pep­per all on the small side instead. I pureed it when it was done…it was pretty good.…next time I am going to roast the onions and pep­pers before adding them to the soup.
    I made his ched­der bear bread to go with it.
    I hope you find one you love.…after liv­ing in Turkey for two years I have quite the fond­ness for lentil soup!

    This is the one I use, but you can leave out the bacon, and it tastes just as deli­cious :)

    For 2.5 litres

    125g smoked bacon, chopped
    1 large onion, finely chopped
    3 car­rots, finely diced
    2 sticks of cel­ery, finely sliced
    200g orange lentils
    400g can of chopped toma­toes
    1100ml chicken stock
    3 tsp worces­ter sauce
    pinch nut­meg
    1 bayleaf
    1 tsp basil
    salt and freshly ground pep­per
    1 tbsp pars­ley, finely chopped

    In a pan gen­tly fry the bacon until th efat begins to run.
    Add the onion, car­rot and cel­ery and fry until soft. Add all the remain­ing ingre­di­ents except the pars­ley and bring to the boil.
    Sim­mer for 2 min­utes. Trans­fer to the slow cooker, cover with lid. Cook for approx 4 — 8 hours. If a smoother con­sis­tency is required liq­uidise the soup after cool­ing and then reheat the soup in a pan. Sprin­kle with pars­ley and serve with crusty french bread.

    I grew up eat­ing lentils. My the­ory is they are nat­u­rally bland and that’s the way it is. They will always have a hearty tex­ture and taste to them.

    Salt, tasty beef bul­lion, onions, cumin, gar­lic, diced toma­toes, that bacon recipe sounds good, car­rots — all these help make them tasty.

    cook­ing them in a pan instead of a crock­pot will help too as I think fla­vor cooks into legume better.

    Try an Indian recipe too.
